10. roasted chicken with rice
I put some paprika powder and cayenne powder on the skin and let it get real crispy. The crispy skin is the best part of the whole chicken. :9

Tonight: Broiled salmon with a brown sugar and pecan glaze; small side of linguine with garlic and pesto; and creamed spinach.

Last night it was Tomato Soup and Tunafish Sands.

But your Tater Tots bring back memories --- ummm, do Tater Tots and Salmon go together....

32. Salmon Recipe
Praline-Glazed Salmon

2 Servings - It is fast, about 15 minutes to make. The original recipe is from Sunset Magazine.

12 ounces boned, skinned salmon fillet, cut into 2 pieces.
About 1/4 teaspoon salt
Pepper to taste
1/4 cup chopped pecans
3 tablespoons packed dark brown sugar
2 tablespoons butter, melted
1 teaspoon lemon juice

Rinse salmon and pat dry. Sprinkle all over with salt and pepper. In a small bowl, mix pecans, brown sugar, butter, lemon juice and 1/4 teaspoon salt.

Place salmon on a 12 by 15-inch baking sheet. Broil 6 inches from heat for 6 minutes. With a wide spatula, turn fish over. Spoon pecan mixture evenly over fish and broil again, checking frequently to be sure nuts do not scorch, until fish is opaque but still moist-looking in the center of the thicket part (cut to test), 1 to 2 minutes longer.

With a wide spatula, transfer fish to serving plate. Enjoy.

23. Mexican casserole. Canned chiles, but you know how it is.
We got a couple of cans of Hatch canned chiles last weekend, so I made a layered casserole -- chicken breast, 2% skim sharp cheddar, corn chips and Hatch chiles. It was totally off the top of my head -- surprisingly, it came out even better than I thought it would! I've never used canned chiles before, I wasn't sure they'd be good ... but for a casserole, they're good enough.

And fairly low-impact, since I used very little oil in it. I used to live in New Mexico, where you could buy Hatch chiles at the grocery store -- I really miss that. The Mr. and I are talking about semi-retiring out there in fifteen or twenty years, I'd love to be able to buy them at the store or the flea market. We went out to visit our family in Las Cruces several years ago and were at a flea market there, they were roasting local chiles on the same kind of rotisserie the convenience stores here in the east use to roast hot dogs! The smell was incredible -- you could smell it all over the flea market grounds!

I buy chiles at an international market a couple of times a year, I'll get four or five pounds and spend an afternoon roasting them in the oven and peeling them, then I layer them in wax paper and freeze them to use when I need them. They're usually poblanos or Anaheims, though -- we don't get green chiles like they grow in New Mexico, unfortunately.

I should check and see if there's anybody in Hatch or Las Cruces that ships them frozen. It would be well worth it to pay a bit to get them one step nearer fresh than the can (though they definitely were good!).

33. Hatch's chiles
One of our markets sells the Hatch's chiles in late summer so I buy several bags, roast them on the grill and freeze them. This past summer one of our Mexcian roasted them in front of their rest., bought some bags too and froze them. I now have more chiles in my freezer then food.

40. There are several New Mexicans on a literary list I'm on
at Yahoo, they kind of gloat about being able to buy good green chiles at the grocery store. I guess I probably would, too, if I lived there, though. One of these days, hopefully, I will. I always tell myself I won't gloat about that stuff if we do, but I probably will.

I don't know why nobody around here gets the Hatch peppers -- as I said, they get Anaheims from California and Poblanos, who knows where they're from -- Texas or Mexico, probably. There might even be somebody around here who gets New Mexico chiles -- I just don't know who it is. There's a locally-owned international market about twenty miles south of here, they get lots of exotic produce, but I've never seen New Mexico greens there. Maybe I just haven't been there the right time of year, I don't know. I imagine if they do get them, they're gone fast -- maybe I just haven't been there at the right time.

brown rice cooked in vegetable broth
black beans slow-cooked with a bit of cayenne pepper
onion, garlic, zuchini, red pepper all sauteed together
roasted anaheim peppers

mix it all together, roll it up in whole wheat tortillas.

mmmm - yummy!
