(a term I hate, but I know you're out there)
Leftover Paella. Specifically, pretty much just the rice and veggies. What would you do with it? I'm thinking maybe get some fresh fish, do something vaguely Spanish with it on the grill, and put it over the leftover rice.
Winner gets grandma's Vinarterta recipe. You know, for the holidays. :)

Sautee 9 or 10 whole cloves of garlic in extra virgin olive oil on the grill, throw in maybe 3 or 4 new threads of saffron, some spicy chorizo, a decent amount of white wine and then the rice and veggie leftovers. Add the cooked mussels and shrimp last.

Add some herbs, a little goat cheese and some beaten egg and make Frittata.
Add some carmelised onion and a little shrimp, mince the veggies and roll the into a bit of puff pastry for empanadas. Add some Amontillado and a homemade garlic soup and you're still in Spain for the evening's meal.
Simple and inexpensive: Add some queso blanco or jack cheese, some scrap fish or seafood and roll into a flour tortilla for an impromptu burrito.
Edit: DOH! Almost forgot: Prepare a tomato-based seafood stew (I can impart recipes if you like), add some seafood and serve over the rice & vegies for cioppino.

Peel shrimp but leave tails on. They make good handles. Marinate in Italian salad dressing or make your own. Grill about 3 minutes on a side until pink. A rectangular basket is best for this. Otherwise it's turn-a-shrimp, turn-a-shrimp, turn-a-shrimp...ad infinitum. Throw 8 or 9 over the paella leavins. Also works great over a Caesar salad. Garlic bread. Wine. yum
