Southern cooking question- please help!!!!

Southern cooking question- please help!!!!
I have a craving for southern style white beans and cornbread. I know how to make cornbread but I am kind of stuck on the type of white beans used to make the traditional white beans. You know the type- with ham hocks and onions. So, does anyone have the answer? I really want to whip up a batch for dinner this weekend.

3. My mother and grandmother used Navy beans, the little white ones
or the larger Limas - baby or large - to make scrumptious white beans, cornbread, and greens.

4. Use great northerns...if you want to fast cook them
then rather than soaking overnight, bring them to a boil with some baking soda...boil for ten minutes...remove from heat and rinse (this cuts down on the gassiness)
Then bring to boil...finely chop some carrots into it (again helps with the gas), put some garlic, and either ham hocks or salt pork in the pan, cut up an onion...ya GOTTA throw in some tabasco..and simmer for about an hour...add salt toward the end so the beans won't fall apart

5. Cook either this way:
Salted water with some salt pork or bacon, pepper, until the beans are soft.

I was at the store today and all of a sudden I had the craving but couldn't determine which beans to buy. I will be dining on beans tommorow thanks to all you fine people!
