mine: "A Pinky & The Brain Christmas Special" (gotta love the joke about the Donner Pary)
also, flame me if you want, but I have to watch the Smurfs holiday episodes (it was my favorite cartoon as a kid), sing along now: "Goodness makes the badness go away......."

The one that was done by the same people who did Rudolph that showed Santa as a young red-bearded youth as he started on his career then getting older and then different Roman gods and personifications of nature meeting to decide whether to grant St. Nick immortality. That was just weird. I pointed that out to my fundy sister and brother-in-law (who were born in the 1950s) when they complained about how Xmas specials don't have anything to do with Xmas like they used to. :)
The California Raisins one - also because of the soundtrack. Best rendition of "Joy to the World" I've ever heard.
Not technically a special but on one Mystery Science Theater 3000 episode near Christmas, the opening skit had Mike and the Bots preparing to sing a carol, and on the first note, Mike knocked over the thermos of hot cocoa onto Crow, who panicked and knocked Mike back into Tom Servo who lost his head, and it disintegrated from there into a huge screaming in terror/pain mess.
