where do they get their meat?

i haven't had much luck, i'm looking for info on restaraunts sources for beef, poultry, etc. i work in a 'raunt and found a chunk of bone in my chicken taco. it's put me off kinda like the "allowable puss percentage" put me off milk and onto soy. i work for a brinker co. and they are dark red, 98 percenters i think. lowest bidder wouldn't suprise me. yuck.
