Rowdyboy: Please post your artichoke and oyster soup recipe |

Rowdyboy, I don't know how to PM or I would have after I saw your post in a thread about fish on Christmas Eve. You offered to post an artichoke and oyster soup recipe, but the poster (sorry, forgot the name) said it was beyond his palate at this time. I responded that I would like the recipe but I don't think you saw it. It sounds great, and I'm looking for something different for New Years. Will you please post it? All my peeps LOVE artichokes AND oysters AND soup!!
I just saw you post on another thread and thought I've seen you to be more of an evening poster. Please post the recipe. THANKS!

for Oyster Stew, 1 container of Oysters (I get mine in the meat department) 1 pat of butter 1 cup of heavy cream 1/4 tsp white pepper
Sautee Oysters along with the juice in a saucepan until the edges curl
add the other three ingredients and simmer until nice and hot and ready to serve. this is about enough for 2 people.

I think I did post the recipe but I'll be happy to do it again...However, its not fair for me to say its mine. Its from the 1992 annual edition of Southern Living recipes (p. 81). Its WONDERFUL!!!
Louisiana Oyster-and-Artichoke Soup
2 (12 ounce) containers fresh oysters 1/2 cup finely chopped shallots (use onions if you MUST) 1 bay leaf 1/4 teaspoon red pepper Pinch of dried thyme 3 Tablespoons melted butter 2 Tablespoons all-purpose flour 1 14 1/2oz can chicken broth (I always use home-made) 1 14 oz jar marinated artichoke hearts, drained and chopped 1 Tablespoon fresh parsley 1/2 teaspoon salt 1/2 cup whipping cream hot sauce to taste
Drain oysters, reserving liquid. Cut oysters into 1/4ths. Saute shallots and next three ingredients in butter in a Dutch oven until tender. Add flour, stirring until smooth. Cook, stirring constantly, one minute. Gradually add broth and oyster liquid; simmer, stirring occasionally, 15 minutes. Remove bay leaf. Add oysters, artichokes, parsley, salt and hot sauce. Simmer 10 minutes. Stir in whipping cream; cook until thoroughly heated. Yield 6 cups.

I feel like I'm Queen for a Day! Thank you all for your kindness. Trust me about this recipe. I had serious oral surgery back in 1992 and my guy made it for me. We've had it least once a month since then. I consider it one of the 5 finest soups of all time.
on double edit: Do I even need to say that it tastes best served with oyster crackers?

I have printed it and will try it this week! Yum, it sounds delicious. I got a recipe from Southern Living a while back--a stuffed french toast recipe (stuffed with a combination involving sweetened cream cheese) and it is so good it makes you want to slap your momma. Twice.
I think it's from a 1994 issue.

Seriously, your description of the soup really piqued my curiosity and I remember you said it was excellent. It sure sounded like it. Thanks for taking the time to post this! I look forward to making it for the holiday. Cheers to you!
on edit: I see something very brave in the marinated artichokes (instead of the plain canned/frozen) even though it calls for draining. I like the boldness of that already. Can't wait to make it.
