The biggest--and most influential--is Fetzer. Check out Paul Dolan's book True to Our Roots, where he details the process Fetzer has gone through in switching to organic production. They have one label, Bonterra, that is certified organic (and is quite good, too--especially their rhone whites), and are moving to have ALL of their wines certified organic in just a few more years.
What's significant about this is that Fetzer buys grapes from growers all over the state to make their mass-produced wines, and they're requiring them to be organic as well. Fetzer has a huge investment in this, and has put programs and financial incentives in place to help the producers they buy from to convert to organic farming. Fetzer's requirements are more or less forcing a huge portion of California's grape growers to convert to organic farming.
Other good organic wineries are Benziger and Frey.
