They love beef tongue.
Don't eat it, though. BSE is spread through eating products from the nervous system of the cow. And the tongue is considered risky, along with less edible parts, like the intestine and tonsils and brain.

that was where I learned you could eat cow's tongues. She and Beezus wouldn't eat it, so the next night they had to make dinner for the family.

to realize what it was I stopped eating it. My ex-husband loves it and buys it for him and my son. They think it's wonderful and couldn't give a damn where it comes from. Do you think their playing video games have done that to them? ;)

When I was a kid, tongue was what we always ate on picnics, maybe because it could be served cold.
Then one day I saw one before it had been cooked and sliced. And it looked like . . . a giant tongue. So I asked the grownups about it, and they confirmed it really was a giant tongue.
Never touched it since.

Cow tongue taco's ROCK, but they take three days to make properly. Pickled tongue (in red wine vinegar sauce) is excellent as well.
Believe it or not, tongue is very tender and delicate. If you didn't know what it was, you'd think it was delicious (I was introduced to it as a kid by a Mexican babysitter).
