Curry
Why is curry so damn good? Indian, Japanese, any kind of curry! Basmati is wonderful as well. Too bad I'm not talented in the kitchen to make my own. Even so, curry is magical!

1. making your own....
Look for Mae Ploy brand curry pastes in plastic tubs (not canned curry pastes)-- I used to pound my own curries but I don't anymore. Mae Ploy pastes are excellent. You can usually find them in oriental markets and online. To use them, simply subtract the spices that go into a curry paste from curry recipes and substitute the appropriate Mae Ploy paste. After a while you can experiment with ways to modify the base curry for recipes that have a special character with "unbalanced" curries, for want of a better term.

15. My girlfriend made a Curried Pork Chop dish this evening....
With onions and tiny touch of cream to make glazey sauce. Delicious.

Some kind of potato cauliflower stuff w/Indian spices to go with it. It was outstanding. (Still licking my fingers) Raw spinich salad rounded out the meal. Red wine. Mmmm mmmm mmmm mmmm.

I think we have a pint sized jar of prepared curry powder, and various other smaller jars, pouches and such of other Indian Spices.

9. My roommate asked the exact same thing
and I couldn't explain it. It's kind of stewy and delightfully spicy. Spices are the key.

14. Me and my friends go to this Japanese curry house
and they have mild. It's still pretty good but I prefer spicy. It's weird. I'm not that into spiciness but when it comes to curry, the spicier the better

take jamabayla for instance, it would be bad mild but spicy its awesome.

20. When we say "curry is spicy" we're not talking, necessarily, about "hot."
But "spicy" as in "contains lots of spices."

There's probably more spices in a single Indian dish then there are on an average American's spice rack.

And that's a good thing.

8. Mmmmm...Thai Red Curry with Coconut Milk...
I do a great deal of cooking with curry, and love to make Panang with venison (or anything else that I can adapt to it). Get some of the Thai Red curry paste in a jar, it is easy to dissolve in hot coconut milk. I usually soak some rice noodles for about 30minutes in hot water, cool them quickly with cold water and then fry them for a bed.

18. On O'ahu there are at least four "CoCo Ichibanya Curry Houses"
all curry, all the time (well 'til 10, anyway). Japanese style, duh. You can even get unusual stuff like scallop curry.

It's, like, so totally East-meets-West. They look like your basic fast-food joint; everything's yellow and all the staff have paper hats. Then you realize that, although you still have an area code and a ZIP code, everyone else in the place is Japanese...

I've given my heart to The Curry House in Little Tokyo or Santa Monica. One of the waitresses is a harpy but its okay because curry rules!

They carry amazing jarred sauces. I'm making chicken in a Punjabi Spinach Sauce tonight. I add a bag of fresh spinach to this and it's almost like chicken saag. They also carry Naan-but it doesn't compare to fresh naan.

It's really really good. I know they have a Masala sauce, the Punjabi spinach, and I believe they have a red curry and a yellow curry sauce.

they usually have things similar to those taco and burrito seasoning packets with instuctions on how to make whatever it is.

they also sell the basmati type rice.

my mom use to make that all the time but i haven't had it in a while.

Mitsuwa Marketplace (BIG Japanese supermarket/shopping center in NJ, though they have a few out west too) sells this one really good mix. I get their flyer in the mail and I will haul my ass to NJ to load up whenever it goes on sale. It's that delicious! I think it's called Kokumaro. They have it in several varieties of "heat", and if there's an Asian grocery store near you, I highly recommend it. Best of all, there's bilingual Japanese/English instructions on the package, which is great for people like me whose Japanese totally sucks. :P
