Really a cajun southern thing, but I am close enough to the cajuns to be a good judge on some kick ass crawfish. Mudbugs! Mmmm!

I know several people who raise crawfish and sell it. They are easy to cook. Just a pain in the ass to eat, but it is worth it. They are best when your lips feel like they are going to explode from the spice!

well, my lips didn't actually explode, that's a little melodramatic. But I'm a drama queen, so yeah my lips totally exploded and fell off and I had to wingle them around in a glass of seltzer water. Then duct tape them back onto my face.
Also, I got an infected hangnail from 'em.
Worth every minute.
More spicy boiled crawfish....please!
