You know, the mildly cilantro one. Oh, I am sooo hungry now for that taste. Quesadillas are to die for!

6. I just made one for lunch
I have to figure out how to get it from 2 ounces of cheese down to one. I did use a multigrain tortilla, with 8g of fiber!

10. Mix:
1 can black beans, drained and rinsed
3 ears corn, cut off the cob, roasted (425, 10-12 minutes)
1 mango, cut into bean-sized pieces
A handful of chopped cilantro
1/2 to 1 jalepeno (depending on taste), seeded, minced
Juice of one lime
(Red onion is a nice addition if you want it)
S&P to taste

I do one with black beans, peppers, avocado, tomatoes, and corn that would be perfect with your quesadillas.

If I bring the salad can I come do dinner? :D

12. Ditto on the black bean salad.
There used to be a recipe on the bettycrocker.com recipe site (please don't laugh. Okay, laugh.) called Colorful Black Bean Salad.

It's kinda like this one, only it had some cubed jicama. I used frozen or canned corn, and never heated it up.

13. I'm making chicken enchiladas tonight :)
I'm going to serve them w/ a side of cheesy refried beans & some lime-flavored tortilla chips & salsa. Might make some mojitos, too. We have tons of fresh mint growing in the backyard.
