What should I make for dinner? I've got lots of tomatoes.

What should I make for dinner? I've got lots of tomatoes.
Fresh from the garden. Anyone know anything fairly easy to make that takes lots of tomatoes? I've already had gazpacho and tomato-mozzarella salad recently. The 'maters are really starting to grow!

7. I just broil them.
Put a little olive oil and some fresh herbs on them and then broil for just a minute or two. You could also add mozzarella on top if you wanted or a bread crumb topping.

Don't know what it's called, but we love it..

In a large container. cut tomatoes into 1/8s, slice cukes thinly, and same with sweet onions.. drizzle with canola oil, add vinegar to taste and some oregano...

cover with lid and shake , shake, shake..

add a bit of salt & pepper and enjoy..:)

edit... found a close copy




5 medium plum tomatoes, halved lengthwise, seeded, and thinly sliced
1/4 red onion, peeled, halved lengthwise, and thinly sliced
1 Kirby cucumber, halved lengthwise and thinly sliced
A generous drizzle of extra-virgin olive oil, about 2 tablespoons
2 splashes red wine vinegar
Coarse salt and black pepper

Dress the tomatoes, onions, and cucumber with olive oil, red wine vinegar, salt, and pepper.
Let stand while you prepare dinner, about 20 minutes. Re-toss and serve salad with crusty bread for mopping up juices and oil.

core the tomatoes
fill with tuna, cooked rice and cream of whatever soup
top with cheese
cook for 20 min or until cheese is bubbly @350 degrees
eat up! YUM!

22. I got it right here!
Sharp cheddar cheese...grated, about 6 oz.
10 pear tomatoes (peeled and sliced...drop them in boiling water for about 20 seconds...transfer them to very cold water until they cool...then peel them and slice them.)
Basil, fresh, chopped about 1/3 of a cup
Scallions...chopped...about 6 stalks
About 1/3 cup of mayo mixed with 2 tablespoons of lemon juice and 1/2 teaspoon of kos. salt and a touch of pepper.

Make your own pie crusts or buy them. Get the pie ready.
Line the bottom of the shell with the tomato, basil and scallion mixture.
Cover with 1/2 the cheddar cheese.
Cover that with the mayo mixture.
Cover that with the rest of the cheese.
Put a few slits in the top pie crust.
Bake at 350 for about 50 minutes.
(Put some tin foil under the pie because it bubbles over.
Let this cool a bit before you eat it

This is also pretty good cold.

30. Easy, fast tomato sauce for pasta
Just cook up some tomatoes with garlic, choppoed onions, chopped peppers, basil, salt, pepper, capers and parmesan. You don't need to simmer it or anything, just saute in a pan until it all kind of comes together. I would start w/ the onions, garlic and peppers and get them soft, then toss in everything else. Yum. :P

41. my favorite fresh tomato dish::::::Cold Pasta sauce:
Chop up 4 or 5 good sized tomatoes
chop up 2 or 3 cloves of garlic
chop up a good handful of basil

mix together in a large bowl with 2 cups of very good olive oil,
salt and pepper to taste, and 3 cups of shredded mozzarella cheese.

cover and let stand at room temp 3 to 4 hours


Cook up your big pot of linguini or other favorite pasta, drain
and combine immediately with the sauce. stir, and watch the hot pasta melt the cheese.

Eat with salad and good bread. Provide napkins as the oil is drippy.
