8. lamb chops braising right now....
I browned them with onions and portabello mushrooms, then added white wine, stock, some herbs and a bit of balsamic vinegar. I'll simmer for an hour or so, then throw in a handful of mixed vegies and reduce the liquid to almost dry.

10. Chicken and rice dish
Make as follows:

Fry four chicken breasts in skillet with a touch of olive oil. Remove chicken from skillet, sprinkle with paprika and black pepper to taste. Combine 1.5 cups of water, one can of cream of chicken soup, and more paprika and black pepper to taste in a skillet, stir well, boil. Stir in 2.5 cups of Minute Rice (preferably the Premium kind), reduce heat to low, add chicken breasts to the mix, cover, let simmer for 5 minutes. Makes 4 servings.

11. I'm making a variation on Jane Brody's "Chinese Spaghetti Salad"

from The Good Food Book. I'm substituting some nice looking string beans for the chicken breasts.

Whaddya think? Parboil them beans for about a minute?

Ingredients at this point are spaghetti (cooked al dente then cooled, sesame oil, chili oil, dry mustard, soy sauce, green beans, scallions, chopped red peppers, parsley, sesame seeds, and a spot of red wine vinegar. It's usually pretty good.

Hope I don't fuck it up.

Enjoy your spaghetti and meatballs, progs.

14. It's my good husband's birthday, so I asked him what he'd like to have!
He said "Steaks." So I got myself down to my local meat market and lo and behold, the rib eye steaks are PRIME and on sale for Father's Day! I'll take two, please...I also picked up some French bread that I'll make into garlic toast. And some vegetable...haven't decided which one yet...We like to eat simply at dinner...

17. From the Betty Crocker Good & Easy Cookbook (1964):
Beefburger Specials

1 lb ground beef (I used ground sirloin)
3 tablespoons ketchup
2 teaspoons preparted mustard
1½ teaspoons horseradish
1 small onion, finely chopped
1 teaspoon salt
1/2 cup soft bread crumbs
1/4 cup milk
1½ teaspoons Worcestershire sauce

Combine all ingredients. Shape into 4 large or 8 small patties. Broil on pan 3" below source of heat, about 6 minutes on each side for the large patties (4 minutes for the smaller ones), or until browned outside and medium done inside. 4 servings.


*** I don't care for horseradish, so in place of the horseradish, I used hot pepper sauce (not 1½ teaspoons; I eyeballed what looked like a good amount).

I made 6 patties, and broiled them about 8 minutes on each side.


I served these with toasted buns, fresh steamed broccoli, and a tossed green salad.

For dessert, I made another cobbler; blueberry this time. We haven't had dessert yet. I just pulled it out of the oven and am brewing a pot of decaf coffee.

I baked boneless skinless chicken breasts marinated with Italian dressing topped with bacon and processed swiss cheese. I also made garlic and chicken flavored rice-a-roni.
