Hate the little musical humming thing he does while mixing things. And "essense" is what happens to your spice rack in an earthquake. I'm more of a focused flavor guy.
And you can't just pour booze into stuff even if the audience applauds.

...I'm rather chummy with the folks at Fetzer's Valley Oaks Ranch, where Emeril does several events a year (many of them fundraisers). No one has had anything but glowing praise for him there; he's gotten a reputation (among this group, at least) for being easy-going, friendly and accessible.
So, love him or hate him, he at least seems to be a really decent guy.
