Need a recipe for boneless chicken thighs. Help me Lounge Lizards!

Need a recipe for boneless chicken thighs. Help me Lounge Lizards!
I bought some chicken thighs on sale today because I had some yummy tequila lime chicken at matcom's yesterday. It's hot as hell here, so my usual heavier recipes won't suffice. I also make a yummy mole sauce but don't feel like exerting the effort. I'd love a new recipe if anyone has one! Thanks! :-)

3. you can buy boneless, skinless thighs, just as you can buy boneless,
skinless breast of chicken. doesn't your market carry that?

4. Yes. they are right next to the boneless breasts.

I was going to suggest a tequila-lime chicken when I saw the title. I make a truly wicked one, with LOTS of hot pepper, which probably would not be suited to such a hot day.

do you make yours with yellow rice?

5. So? Marinate them in Tequila and lime.
You could freeze them in the marinade and they would be nice and pickled by the time you want to use them.

Ditto with a nice Carribean Jerk sauce.

6. I like to marinate them
about half an hour in a mix of soy sauce and liquid garlic with salt and pepper and then toss them in the oven and roast them in that. It's kinda salty but tender and tasty!

24. I saute them in olive oil/garlic
add some soy sauce and vinagre, the last 2 minutes add some julienne green onions , cover til the wilt a little-serve your pollo adobo, very similar to yours crispini

15. Marinade with all of these:
Lemon juice
Freshly minced garlic
Freshly ground coarse black pepper
Extra Virgin Olive Oil
Sage
Thyme
Rosemary (rub these 3 spices into the chicken)

Overnight marinade, if possible. Grill over a foil pan of water with a covered grill, preferably charcoal.

Forgot to add: if you have a charcoal grill, throw some bay leaves on the coals when you first sear the chicken. :-) 4 or 5 will do.

18. I just made chicken & broccoli stir fry.
Although, I must confess that I splurged with my semi-annual homemade crab rangoon as well. My friends/neighbors liked it so much last year that they bought me a pro fryer for Christmas! Scary. Really Scary item to have in your house. It collects dust most of the time, but a few times a year I break it out for some good old fashioned rangoon, wings, fish, or other fried delights!

those guys seem to know everything about good recipes for chicken and everything else. I was reading some of their chicken recipes a few months ago and they were awesome.

29. Getcha some bread crumbs.....
Pour 'em in a baggie with some lemon pepper. Shake well. Take the skin off of the chicken. Please each piece into the baggie and shake, coating the chicken completely with the mixture.

Place on a baking sheet and place into oven at 400 degrees. Cook for 35-40 minutes. Serve with some taters and a veggie of your choosing.
