Help! What veggies can I serve with homemade Stuffed Peppers?

I haven't made stuffed peppers in a long time...and can't remember what goes with them to make a great meal.

My farmer's market sucked me in....there were four huge, lovely peppers and I was going to cut them up to freeze but in the back of my mind "Stuffed Peppers!" called out to me.

So, I made them...with a turkey, rice, celery, onion and spices recipe...not beef.

But, now what do I do? I don't have yellow squash which might be good...what else?

On Edit: BTW...they are cookin' now...I need immediate help.

14. They are predicting 110 degree "heat factor" for tomorrow here in NC....

ugh...so I tried to cook a couple of meals in advance.. I hate to think about folks who live in climates that don't have air-conditioning...or those who can't afford the payments. :-(

But, I do remember when a "reverse fan" in the evenings worked great...like air conditioning...if one worked in an "office" where there WAS Air-Condioning, you could come home and with a "reverse output" fan or fans in your house be comfortable with windows open all night.

I guess it's a trade off. :shrug:

22. here's a nice cool dish for everyone suffering through the heat wave
Japanese cucumber salad
--peel and thinly slice a large cucumber or a couple of small ones
--if available, peel and cut an avocado into thin wedges, and mix into the cucumber
--if you like, you can add some seafood (cooked shrimp or crab, or that fake crab made from pollock)
--cover with a dressing made from a half-cup of rice or white wine vinegar, a teaspoon of sugar, and a pinch of salt
--refrigerate

12. I chopped up a teeny bit of red pepper into the mix...and added some
spices given to me that are "organic." Also used a little "fresh basil" from my window pot that's growing. I used "sweet basil" and not the other kind. It does smell really great as it's cooking.

I hope it turns out okay after all this time...and tweaking the recipe to new tastes. These are not "Grannies" Stuffed Peppers...I tried to do "New age" with the ground Turkey...and some other stuff to get rid of the "mad cow" thing... :shrug:

over the Stuffed Peppers would have been a good thing, though. I felt using the "turkey" instead of "Mad Cow Ground Beef/hamburger" would cost me in taste. And, even though I added a half cap full of olive oil to the ground turkey...it still was "drier" than I would have though.

So...if you use "ground turkey" instead of "ground beef" maybe it's good to ratchet up the tomato sauce and do a little extra basting (pouring the sauce over the baked peppers while cooking) just to make sure the final results are very moist.

It was still good and the extra "spices" (use lots of them...because Ground Turkey is very bland in taste) seemed to work out well for my "tasters" who ate it.

The "vegie medley" seemed to go off real well and the "Toasted Garlic Bread" was a hit.

I might have added a "spinach salad" at the last minute......(as a DU'er suggested) if I had more people. A salad with feta cheese and mucho button mushrooms and a little red onion.

But..as it was we totally enjoyed it and we aren't lying on the "COUCH in a gaseous state." :D

6. Stuffed peppers is almost a meal in itself.
Meat, starch, and green vegetable. I'd make a salad to go with it.

10. Okay....you all gave me some "inspiration." Here's what I decided...
not having "fresh corn" and having had "spinach salad" last night, and brocolli the night before...

I went into my freezer and had a "fozen medly" (I know....) of green peas, baby corn, carrots and snowpeas. It's light and I thought (in desepration it might go well with the stuffed peppers which already have, rice, celery, tomatos, onions and spices plus an egg to bind it all together and some cheese on the top.

I put some Garlic Bread in the toaster oven and skipped the salad fearing that the Giganto Stuffed Peppers would be SO Much..........

:D...with all I put into the "stuffing" one would wonder why I need anything else. :D

But I'm going to put the "extras" into the freezer for another meal.

and I got good tips... It's coming out of the oven, now. I did the "corn, carrot, snow pea medly with Organic Garlic Bread..

I think I could have added a salad...but the Peppers are so HUGE...I figured we'd all be lying on the couch all night! :D

21. I have a couple left over...we had to split 'em...yellow squash, new
potatoes as a medly...a little shallots thrown in ...maybe...would be a great addition when I reserve them. A little green beans too, maybe stir-fryed in? :shrug:
