A few that come to mind are:
Rickie Lee Jones' and The Four Tops covers of "Walk Away Renee" The Adult Net's cover of "Incense and Peppermints" The Slickee Boys' cover of "Pictures of Matchstick Men" Siouxsie and the Banshees' cover of "Wheel's On Fire"
No, I am not gonna mention Dread Zeppelin :)

And the ultimate best cover, in my view is "Respect" by Aretha Franklin. Otis Redding did that song pretty well, but Aretha turned it into an anthem.
