The meaner the shack, the better the BBQ
-Hardhead's First Law of BBQ: Stalking wild BBQ in unfamiliar terrain

Many of the best BBQ houses are located in shabby little diners. Look for the ugliest, greasiest place you can find, preferably sharing a building with an oil & lube shop. Out in the country, on back highways, look for large houses converted into country stores by the roadside.

A seasoned BBQ aficionado can follow his or her nose to the best BBQ within 70 miles. There is a zen vibe to BBQ greatness that calls to die-hard fans and makes them pull over. A little repair-shop at the stop sign in Dogwater, Texas might just have the holy grail of BBQ. Certainly, the worst it can do is kill you. No self-respecting addict will pass it by. Bring it on: heartburn, reflux, diarrhea, brain tumors...if they call it BBQ, we will eat it.

But it's not made with cows.

3. This is true. The proof is Jay-Bee's BBQ on Avalon Blvd. in Compton

The place is so bad they have a Plexiglas wall between the customers and the cash register/behind the counter. Supreme BBQ however.

Another one is Burell's in Santa Ana.

4. I know those places, literally risked my life going to Farmer Brown's
across from Chicago's worst housing projects--Cabrini Green. But it was GOOOOD.

7. Big Daddy's in Des Moines is a place kinda like that.
No Yuppie fern bar that's for sure. Damn good eat'n and sauce that ranges from mild to beyond blazing hot.

And just remembered I have two left in the fridge. Yum.

I must warn you that no cussing, no gambling, and no farting are allowed.
