so, used my Kitchen Aid to make sausage. we had them tonight.
overall a 90%
could have kept a LITTLE more fat ON the pork shoulder. trimmed MOST of it which made them a TAD dry but tasty as HELL!
natural casings are not at ALL hard to work with. just rinse them REALLY well
so, I had a bratwurst-sized sausage with NOTHING but pork, cheddar, prosciutto and spices
i know EXACTLY what was in it cause it was from scratch
DDDDEEEEEELLLLLIIIIICCCCCIIIIIOOOOUUUUUSSSSS!!

MMmmmMMMMMmmmMMMM... prosciutto. I miss fresh proscutto. Ever since leaving NYC, I have to buy it in those packaged plastic vaccum packed fucker things, so I stopped buying it, because what's the fucking point? It tastes like vacuum packed shit.
The sausages sound wonderful!!
Perhaps, whenever you're ready to have WillPitt do me in and get your carpet stained, you can invite us all over. It would be a good last feast.
