hey, iPod/music file geniuses...
...is there a program I can use to organise my mp3/aac files and import them to iTunes in the order I've organised them?

Here's the problem...

I think iTunes is getting the song info from the MP3tags, not the file names. So if a file is in the correct folder but has an incorrect tag, iTunes will file it incorrectly when importing it.

example:

all the tracks from Sex Pistols Never Mind the Bullocks album are in one folder called "Never Mind the Bullocks". One of the tracks is tagged "Sax Pistols" by mistake, even though the file is called "Sex Pistols - Bodies". So when iTunes imports the files it creates a new folder called "Sax Pistols", and files "Bodies" in that folder.

5. it is probably 10,000 tags, dude...
...somewhere, somehow, there has got to be a program that updates or even erases tags.

The file names are correct... if I could just erase all the tags or default them or something, this would be solved.
