1. Saag
Saag is spinach. Saag Pinar is an Indian dish made of curried spinach and soft cheese curds, and it is the most popular of the curried spinach dishes, but I'll eat any kind of saag. We drive 130 miles one way each month so we can eat at an Indian restaurant and get this delicious dish.

11. I can make Saag with potatoes.
Which works quite well. My cookbooks are at home (I'm in my office), but here goes from memory.

Open two boxes of frozen chopped spinach, place them in a pot with a few spoonfuls of water. Break the chunks up as they melt, add chopped garlic, green chiles, grated nutmeg (not too much), and butter to taste. Let this simmer while you steam the potatoes.

Take 4-5 red or white potatoes, unpeeled, split them lengthwise, and place in a steamer. After about 12 minutes, test the potatoes with a sharp knife; if they are just soft, remove them and allow to cool enough for you to peel them. Peel ASAP, chop them coarsely and roll them in a little oil (not olive).

Turn the spinach off and set the pot aside. Mix together: 1 TBS of ground cumin, ground coriander, 1/2 tbs tumeric, black pepper, red chili powder or cayenne, paprika, and 1 tbs of garam masala (curry powder).

In a wide skillet, heat some oil (canola is good), add hot green chilis to taste (I use about a pound); a large onion, chopped; garlic to taste, and a tbs of black mustard seeds. Cover, and turn heat to medium low. When these vegetables are soft, add the drained spinach mixture, stir well, and add the spice mixture. Stir again, cover, allow to heat through (5 min). Then (but not before) add salt to taste, and more butter if you want. Also, you can add some lime juice to this as you take it up.

17. Great! One thing:
At the end of the process, take care not to let the mixture scorch. The spinach doesn't HAVE to be drained, as the liquid will evaporate. Oh, and if you add milk or cream at the end, it's far better. Just let the milk heat through, no boiling or it will curdle.

2. Probably Cuban Black Bean and Rice (vegetarian).
Or, a good Chinese stirfry using tofu, shitake, Shanghai bok choy, HOT PEPPERS, etc etc.

Or, West African okra and tomatoes in peanut sauce, with Guinea peppers.

Corinna eggs..this is only funny if you know where we live..they are south of the border eggs...Melt butter in fry pan, saute onions, peppers, fresh tomatoes, pour in scrambled eggs, top with chedder cheese and scramble the mess...put in a burito and top with hot sauce...

10. Deer meat cubed and butterfly'd open
with a piece of jalapeno in the middle wrapped in bacon and marinated in Lawry's garlic herb marinade. Cook over charcoal and the whole neighborhood smells like a Greek restaurant. I serve it on a bed of wild rice with a lettuce and tomato salad.

beef round roast marinated in wine, spices and oils for three days--cooked and served with red cabbage and potatoes, or potato pancakes. A fine beer to go with it--many are available--I like Sam Adams--hubby likes Geary's. A dark beer is excellent. For desert--some sort of fruit based pastry. Then, collapse on the couch and watch the football game, or a video. This can only be done once or perhaps twice a year--usually at Octoberfest time.

16. One of my fave meals is leak and potato soup with a loaf of fresh made
bread (preferably a goat cheese pepper bread! Yum!), some cheese, some butter, maybe some proscuitto.

Yum.

(I make the soup with cream, and I blend it all up so it's smooth and creamy, and serve it hot)

potato soup recipe: melt four tablespoons of butter, add four tablespoons of flour, cook till a rue, (30 sec) hadd skim milk and a splsh of cream, cook till thick, add cooked potaotes and a little cooked bacon and scallions and chives, garnish with bacon bits and chives....

I know of very few things that aren't improved with bacon. :-)

Skim milk, though? Haven't touched that in years. half and Half or cream for me in my soups.

23. Any meal sounds good to me tonight
I've been living on crackers and cheese, toast, canned soup and a few decent leftovers from the freezer for weeks. I went out this morning with some friends to a breakfast buffet and it was some of the worst food I've ever tried to eat.

I'd like a big Greek meal, greek salad, pastitio, moussaka, greek green beans, spinach and feta pies; stuffed shells or lasagne with a big salad and garlic bread; New Orleans food - any of it; grilled shrimp or fish and grilled asparagus; garlic mashed potatoes and a roasted chicken. I could list many more, Cuban, Indian, Middle Eastern - I WANT SOME GOOD FOOD!!!
