Great Tony Tantillo (.com) recipe for green beans. Kitchen tested tonight.
I picked about 3 pounds of green beans in the garden today. I picked through those for the smallest, and most tender, for my solo dinner tonight (a big handfull). I boiled the beans for three minutes, and then plunged them into cold water. I put about 1/4 cup of olive oil in a skillet and started warming it. I added about 1 tablespoon of anchovy paste and the zest of a half lemon. I stirred this mixture on simmer for a few minutes, and then turned up the heat a bit. I dried the cold, blanched beans and put them in the pan with the hot flavored olive oil. I stirred them in the oil for about three minutes and then served them on a separate plate. Excellent!
