What's for supper?
I'm making Thai Chicken Breasts, marinated in coconut milk, sesame oil, ginger and soy, and served with a Coconut Milk, Thai Basil, and a sprinkle of unsweetened coconut. Normally I would add mango to the dish, but my husband and I are low-carbing for a few weeks to drop a few pounds.

I'll serve a nice green salad and garlic string beans along side the entree.

What are you having this evening? :-)

(New York Cut ribs) cauliflower and baked potatoes. Sweet Baby Ray's BBQ sauce.....got the grill fired up now....

we have a pretty good BBQ place on the NH border. We can't afford to go out to eat very often, so I tend to cook at home.

12. Same here......
but since the heart attack last December the diet dictates that I can't eat high sodium content foods...which is almost everything prepared in a restaurant...so we do a lot of home cooking and make as much as possible from scratch.....

the ribs will be "par-boiled" to melt off the fat and then put on the grill......

rice, onion, garlic, tomato sauce, salt and pepper. I use very lean beef in order to keep the fat content down.

14. I LOVE stuffed peppers.....
In a week or so the backyard garden should yield a dozen or so peppers and then it will be my turn to have stuffed peppers.....

20. Eek, not really.
I just flatten the breasts and then place a piece of prosciutto on each one, then a spoonful of ricotta mixed with spinach and roll them up and seal with a toothpick.

Bake at 350 until chicken is done, about 1 hour, then I serve with marinara sauce and linguine.

18. Probably unhealthy State Fair food
At 5:00, my two youngest kids (17/13) have the final of their three performances at the CA State Fair. It's about freaking time!! I can't stand that place! Too many idiots. Maybe I'll have some deep-fried grease.

2) Glass of Chardonnay (doc's orders)
3) I think rotini with butter & garlic & a little salt & pepper, and a little sauce. Some ricotta thrown in and mixed well. Shredded cheddar atop that.

breaded with crushed croutons mixed with parmesan cheese. Baked for 45 minutes at 400. Mashed potato's with brown gravy and fresh green beans cooked with red onion and green chilies. My daughter & hubby cleaned their plates! (I typically do not eat dinner.)

mashed potatoes
cream gravy with lots of pepper
fresh sliced tomatoes (from the garden)
string beans (also from the garden) with onion and bacon.

And it was good.
We eat healthy most of the time but once in awhile ya' jes' got ta' have the gravy.
