I went to the supermarket, bought a few things including a 1 lbs package of sweet Italian sausages.

Got home and decided to cook'em up to have with some pasta... wrong!

I thought I had a jar or two of prepared spaghetti sauce, but I didn't (I like to let the sausages slow simmer for an hour or more until they're soft as butter).

I did have a couple of 1 lbs cans of base chopped tomatoes for when I make my own sauce, but I didn't have the time, nor did I have the patience for dealing with it.

What I did have was a few 15oz cans of Hormel chili. Hmmmmm.... why the fuck not.

I ended up simmering the sausages in the chili while at the same time sauteing some onions, green peppers and mushrooms in a skillet with butter.

Added a little garlic, salt and pepper, threw the whole mess together and let it cook for another half hour. It looked, smelled and tasted good after the initial beta testing, but something need to be added.

I scooped up a serving and threw some grated sharp cheddar cheese on it. Put it in the microwave for 30 seconds and my near perfect meal was done!

Fuck my cholesterol level... I'll worry about it some other time.
