6. Squid Balls
2 lb Squid cut into rings
1/2 lb Cooked shrimp
4 Cloves garlic chopped
1 Egg yolk
1/2 c Water chestnuts, chopped
1 c Chicken stock
1 tb Ginger grated
6 tb Peanut oil

Poach squid rings and tentacles in boiling water for
30 seconds. Drain and set aside to cool. Saute garlic
in frying pan over low heat in 1 Tb of oil until
lightly browned. Combine squid, garlic, the egg yolk
and the rest of the dry ingredients in a food
processor. add 1 or 2 Tbs of oil as you go. Stop when
the mixture forms a large ball. Remove and form into a
dozen or so balls. Heat 3 Tbs of oil in a heavy frying
pan. When hot, add squid balls and brown lightly on
all sides. Turn down heat, add stock and cover. Simmer
for five minutes.

8. Just had some good calamari yesterday
I suggest finding a light tempura batter to deep
fry it. Its way good done this way.

3/8 cup Flour
1/8 cup Cornstarch
1/4 tsp Baking Powder
1/8 tsp Baking Soda
1 Egg White
1/2 tsp Salt
1/2 cup Water
1/4 tsp Garlic Powder
1 tsp Parsley
1/2 tsp Paprika

Directions:
Combine all ingredients in a large bowl and mix until well blended. Dip fish fillets in flour and coat each side, then dip in fish in batter and fry in oil until golden brown. Place fried fish on paper towels to drain off excess oil. Serve hot.

9. try it in salad
cut up squid, season with pepper, sautee BRIEFLY in lots of garlic with olive oil

serve chilled or warm with sweet garlicky lemon vinaigrette, mixed baby greens, maybe cherry tomatoes + antipasti


or you could make a marinated squid salad, just add sauteed squid to vinaigrette, sliced raw red onions, fresh herbs. serve on crostini (maybe fried polenta?)


squid is so versatile actually, but I like it best in these simple mediterranean styles. it's so good any way though mmmmm
