Prosciutto-stuffed chicken breasts
Butterfly chicken breasts and trim fat. Stuff with prosciutto ham, sliced mushrooms, and shredded cheddar. Saute in butter seasoned with 1/4 tsp basil, 1/4 tsp marjoram, and a pinch of tarragon. When chicken is beginning to cook, add 1/2 cup chianti and continue to saute.
Also-Steamed asparagus spears with Hollandaise sauce, and cheddar/cream cheese mashed potatoes with red wine gravy.

I really enjoyed both of you at the meetup and I think that adding that to the enjoyment of good food would make for a great experience.
Believe it or not, I am actually a pretty good cook. I used to do a lot of cooking for the family and when I was engaged I did the cooking for us. It's only been recently that being single has taken it's toll when it comes to taking the time to prepare a meal for just me. Once in a while i get the bug again and make some decent dishes.

CREAMY TURKEY VEGETABLE SOUP
1 large onion, finely chopped 2 tablespoons butter 3 cups diced unpeeled red potatoes 2 cans (14.5 ounces each) chicken broth 2 cups cubed cooked turkey breast 2 cups frozen mixed vegetables, thawed 1/2 teaspoon salt 1/2 teaspoon white pepper 1/2 teaspoon poultry seasoning 2 cups heavy whipping cream
In a large saucepan, saute onion in butter until tender. Add potatoes and broth. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Stir in the turkey, vegetables, salt, pepper and poultry seasoning. Cook 10-12 minutes longer or until vegetables are tender. Stir in cream; heat through (do not boil). Yield: 8 servings.
** I used about 1/2 cup cream and 1-1/2 cups evaporated skim milk instead of using all cream. It works beautifully and cuts a lot of fat and calories.
** I used chicken instead of turkey.
** You could easily use your own stock instead of canned broth.

PETA because they're a bunch of fucking idiots who don't deserve the time of day most times.
Me, because I love prosciutto, and since moving from NYC, the only kind I can find is that shit that comes vacuum-packed from God knows where, so I don't buy it. Better no prosciutto than half-assed prosciutto.
Though if I were making what you made, I wouldn't use cheddar - I'd go with a gruyere. But then, with the Chianti, the gruyere might be the best addition, come to think of it.
