40. It's the fat layer
off the back of a piece of hog jowl bacon; rather like fatback, but smoky and far more flavorful in a pot of beans. Or in a pot of turnip or mustard or collard greens or kale.

And it was yummy!

41. Sounds really good.
I was wondering how much flavor could possibly be in a flap of pig cheek.
Beans and greens, one of my favorite meals.

42. If You Ever Watch Mario Bataglie
on FoodTV, you'll see that the Italians prize that cut.

I like the jowl from Cumberland Gap. Available in most Krogers. Cheaper than bacon, with tons more flavor. We always save the back for beans and greens and so forth. And, b-t-w, if you've never tried "cranberry" or "october" beans instead of pintos, you're missing a real treat. MUCH better bean soup.

Good and good for you! Well, at least the beans and greens, not necessarily the fat. But you've gotta pick your battles. (he said, rationalizing wildly)
