slice off the top and pack the chambers with your favorite stuffing. Roast at 350 for about 45 minutes to an hour, covered, basting occasionally with the water you boiled it in.
I LOVE beef heart, calf heart is even better. The only beef heart I can find locally, though comes cut up, not whole.
