Mmmmm homemade enchiladas....it's what's for dinner!!

....I first browned a lb. of beef...added taco seasonin'...then stuffed flour tortillas with the meat...sharp cheddar cheese...pico de gallo...black olives and a dollop of sour cream...lined the bad boys up in a casserole dish and poured green chile and red enchilada sauce and more cheese on top...let sit in the fridge all day then popped 'em in the oven..covered...and baked for 45 minutes at 350 degrees....O.MY.GAWD they were freakin' fabulous if I do say so m'self.

Try making some potato(e) burritos sometime.

Boil some potatoes with some onion and serve in a burrito shell with grated cheese. Pour some good salsa over the top and then sour cream.
