10. Sicilian is sort of like foccacia

Raised dough crust. The toppings pressed in to the partial risen dough, then it's left to finish proofing, so the ingredients are in and on top of the crust. An old Italian widower in my neighborhood used to make it in jelly roll pans every Saturday morning and all the kids would line up at Ernie's for a slice. I think it kept the sweet guy alive after his wife died.
