Wots fer breakfast? Pancakes, of course... |

1/2 cup (or more) unflavored yogurt
1/2 cup (or more) of that coconut milk you bought on sale and don't know what to do with
1 egg
1 teaspoon or so of the oil you poured off the top of the natural almond butter jar
a bit of vanilla
a pinch of salt
Optional-- a banana, but that then requires a blender be dirtied.
Mix all of the above into a homogenous glop.
then stir in--
the bottom half inch or so of that almost empty blueberry preserves jar
teaspoon or so of double acting baking powder
enough flour to bring the whole mess to proper consistancy
When serving, only real butter and real maple syrup are to be used-- never any of that corn syrup crap "flavored" with maple.
Optional might be natural fruit syrups, or, for the sugar avoiders, the Splenda sweetened completely artificial syrups. They're not that bad if you've got a diabetic or glucose tolerance problem. (But then you probably shouldn't be eating pancakes anyway)
