Good uses for lame beer
I used some lame pilsner to poach a salmon filet tonight. I added a little celery, salt, pepper, and thyme. It was yummy!

What do you do with beer that you're less than thrilled with?

6. Beer bread
I just got a birthday gift of a beer bread "kit". I'll use it to use up some of the leftovers of the swill I had to lay in for my party for family members who haven't taken to good beer yet. Proof that things sometimes work out, sort of.

32. Maybe a little whiskey,
some Worcestershire Sauce, Oil, Crushed Garlic, Cajun or Creole seasoning, possibly some brown sugar. It's kinda whatever hits me at the moment. Then I marinade the meat in that and use some of it in a meat injector while the meat is cooking.

33. I let 'em simmer for about an hour
That way, they are well-cooked (have to be careful to thoroughly cook pork), and have the briquettes nice and hot when the ribs are done simmering. Then I barbeque them, and move them to the edge of the grill, so they are not directly over the coals (and they ARE slathered in barbeque sauce!). Then I prepare the steak (or steaks, depending on how many people are eating). By the time the steaks are done, the ribs have had time to absorb the barbeque sauce.

34. for a minute there i was a little concerned for the salmon filet...
but so long as it turned out :7 we were at a fancy fondue establishment & after all the hoopla & exorbitant menu prices i nearly fell out of the booth when the guy told us that they use "budweiser" in 'the due pot' after "much consideration" so...what do i know so long as it works :thumbsup: lending some gravitas to the assertion i suppose,

I know, that might sound strange, but there is a little town called Coburg, just outside Eugene, Oregon, and their signature soup is Beer Cheese Soup. I used to have the receipe for it, and it was delish!!
