I'm not using Applewood, Mesquite or Hickory. Sorry, been there, done that. All those woods are too strong and lack the suble flavors that goes with some of the mellower California smoking woods. Right now I'm trying these two - and will probably experiment with Pecan and Walnut soon.
ON EDIT: this last weekend I did the baby backs with Oak and they were delish.
