A reviewer of my favorite wings joint in this town also likes the baked ones better.

But the restaurateurs at Fire on the Mountain are Buffalo traditionalists.

Anyway the oil they fry in is hotter than hell, so the wings aren't greasy at all.

That's good to know... I'm not the only one! Yay!

It's really not the greasiness that does it, though. I love greasy food... it's just something about them. Maybe I haven't tried really good fried ones yet. The ones at Hooters and Wing Street I don't like.

and fat better than quick-frying does.

Next time I'm at Fire on the Mountain, I'm going to get a $4.00 jar of the hot sauce to go, and just dip carrots and celery in it, alternating dips with Bleu Cheese dressing dips and great swallows of Terminal Gravity IPA.

Maybe I'll have that snack for Sunday breakfast, in fact.

It's really about that sauce, for me.

However I like their wings. Plus the beer is really cheap. And lots of tvs to watch sports. The rest of the menu is terrible but the wings themselves are good.

29. the sad history
i lived in buffalo ny in the 70's and 80's as the chicken wing process was being developed.

they apparently were createrd accidentally by a cook at Frank and Theresa's Anchor Bar downtown when the wrong order was delivered.

i would say that the legend among students was that the last question that they asked when you went down there for a job interview was "are you jewish," but a friend who had applied told me they'd asked her that. and she complained to the city, and was told to get in line, and that she probably wouldn't really want to pursue a complaint. all depends on what you believe, i s'pose.
i never applied for a job there, so it could be urban legend.

i do love them wings, tho, but no-one i know ever went to the place they were created.

i can remember coming back from work at 3 in the morning, stopping to get wings, and walking the streets, which were literally strewn with wing bones (ten cents a pop) and the sounds of dogs cracking the bones open.
