1. Put 'em in a bowl of cold water. Drain and refill every 20 minutes.

That should defrost them quickly.

I've made things with microwave defrosted chicken that, yes, cooked in some parts, and it still came out OK. I'm not the safest cook in the world, though, so I don't know if there's any health risks from that. But it tasted fine.
