Sounds great. (If it's just tofu and not chicken).

I don't know what I'll have yet. I'm not hungry. Maybe spinach pasta since all I have to do is heat it up.

7. Just buy either firm or extra firm tofu
and slice it in about 1/4" slices. About 8.

Put about 1/4" or so of canola oil in a non-stick skillet and let it heat.

Dredge in beaten egg. Then dredge in flour with plenty (sorry, I don't measure) of Lawry's Season Salt, pepper, and garlic powder mixed in.

Repeat dredging.

Place in skillet once oil is good and hot and fry, turning once when first side is browned.

It's pretty good. I'll eat it and I'm not a veg.

I'll try it that way. Without the egg though since I don't eat them. I think some of those seasonings and flour may stick. :shrug:

I'll have to try it. I never had Lawry's.

work the same but aren't there some faux egg products? Lawry's has been around for ages. I use it to season french fries and lots of other things. It's a mix of seasonings.

Home made, all. (Butter chicken is easy.) The Kheer uses the leftover rice from Tuesday's beef with Broccoli.

Just waiting on the rice cooker to get done right now....

14. Sure. They're both easy.
Kheer:

2.5 cups cooked, cooled rice
2 cups milk
3/4 cup sugar
handful of raisins
1/4 tsp cardamom
chopped pistachios or almonds to top

Break up the rice into the milk in a sauce pan. Add the other ingredients and heat over low heat until simmering. Use a hand blender or a handmixer to break up the rice kernels, stir and then top with nuts. Serve warm or cold with chai.

Butter Chicken
2 chicken breasts, skinless and boneless and cut into small pieces
1 onion, coarsely chopped
1 Tblsp butter

Saute the chicken and onion in the butter.

Add to the chicken:
2 TB garlic paste, 1 TB ginger paste, 1 T garam masala, 4 TB tomato paste, 1 TB honey, 1 tsp chili powder (or hot curry powder; the latter has a different taste, but still tastes very good) 3 TB butter and 3 chopped green chiles (finely chopped). Saute until the peppers are wilted, the butter melted and the spices well blended.

Add 1 C. half and half.

Simmer 7 -10 minutes until the sauce reduces. Stir constantly to prevent scorching. Salt, pepper and otherwise correct to taste. Serve with rice or naan.

If you need to cheat, you can also use Tiger Tiger Butter Chicken Simmer sauce because the above recipe is a reverse engineer of the Tiger Tiger recipe (I found it at Cost Plus World Market and liked it, so I made up my own using the ingredients on the label as a guide). If you use the sauce (it's a bit pricy at $4 a jar, but with the rice and chicken, it stretches pretty well) go ahead and use the onion and butter in the first part of the recipe. Then when you add the sauce, scrape out the jar with a spatula and then fill the jar with water to 1/3, shake well to get the remaining sauce out, and pour in the pan with the sauce and chicken. Blend well, reduce heat, and simmer for a few minutes (until the rice cooker is done).

Tonite's the last night (thank gawd) of the kids' winter vacation, so we're getting takeout from the local deli section of the grocery store for dinner and renting a movie. I'm home alone, and they're gonna surprise me with whatever they bring back....Mystery Dinner.

The other night I made General Tso's tofu and veggie stirfry on brown rice. I became a fan of the GT's tofu after trying it at a local Chinese restaurant over the Christmas weekend. It's very easy to make--just stir fry some cubed tofu in a bit of oil, then season it in Schezuan sauce.
