7. Cream of Tartar is an acidic by-product of winemaking,
and as such, can be used to firm up whipped eggwhites without adding excess moisture. Which is particularly vital if you want to make Swiss-style merengues.

It can also be used to activate baking soda in some baked goods, in essence, making your own specifically blended baking powder. I use it in that fashion in my homemade scone recipe and find it superior to off the shelf baking powders in some recipes. In scones, the ingredients should come together very with subtlety. Commercial double-acting baking powders tend to impart a somewhat bitter, chemical taste to the finished product.

9. Baking powders with off taste have an aluminum ingredient.
That's why some brands are promoted as aluminum-free because they don't impart that special metallic taste.

My mother made do-it-yourself baking powder when she ran out of Rumford brand, which was the only ready made baking powder she would use.
