sniffa's dinnah menu - missing a green
i've been suffering for aLmost a week now with an upper-respiratory infection, but today i feLt Like a new man (i made it into work too, and hauLed ass) and decided earLy in the morning that, "damnit! i'm gonna cook a nice meaL for removed - they've been taking such good care of me whiLe i've been sick."

anyhow, i recentLy Learned that removed Loved pasta (eats it aLmost everyday... for fun, not necessity) so i decided that my meaL had to have pasta.

but, i have a hatred for pasta... at Least as the focaL point of the meaL.

with these two Leads i went through the market to pick up ingredients. as usuaL, i start in the meat section to check what's on saLe and what Looks Like it doesn't have peLLet wounds. the meat aLways directs the sides/spices and thus my route through the store - so my trips to the market aLways go out of order, since the meat section is in the middLe of the store.
here, in the middLe of the formerLy Living (in the middLe of the store, remember?) i saw a sign that said, "EMERIL SAUSAGE $1.00 OFF" and i found the focaL point of tonight's meaL - emeriL's spiced up sausage.

so from there the menu progressed as foLLows*:

- spiced up sausage (bam! does he stiLL do that?)
- newman's pepper & onion sauce (someday, on a weekend, i'LL make a sauce from scratch)
- rigatoni
- baby carrots
- ??????????

here is where i was stumped. i needed a green to go with the meaL and i choked. i couLdn't think of one good, green compLiment. in a panic i went for brocoLi but stopped myseLf from settLing on a neutraL fLavored side.... but, next to the brocoLi, were the asparagus. there, i ogLed the asparagus and tried to force myseLf to beLieve that once doused in butter and garLic, they'd make the perfect compLiment to my meaL (see above for ingredients). after a short moment, but what seemed Like an eternity (everyone was watching me!) i just said fuck it, and decided to make the meaL as is.

it was deLicious, but if i make it again i'd Like to have a green.
what say you for a compLimentary green vegetabLe?




* does not incLude bread - that doesn't count.

1. Asparagus
Goes with everything, yummy, can be prepped in a steamer apart from the other dishes or in a pan, seared. Use fresh, not canned, as the canned tends to be very soft. Crisp 'n green.

You also could've gone with a spinach side salad, OR, if you just wanted color, chop (not so finely) spinach and add to the sauce before putting over the pasta. You also could sprinkle it liberally over the final pasta/sauce product.

4. Drizzle asparagus in olive oil and coarse salt then broil it.
:9 Very nummy and really good with pasta. Also, I'd roast garlic to serve with the bread.

chopped almonds or cashews at the broil point, during the last couple minutes.

6. French green beans
they are smaller than ours and you cook them whole. I drizzle olive oil and s & p, lemon juice too if you have it. :9

10. Broccoli rabe would be quite excellent
I make a pretty good rigatoni with sausage, peppers, broccoli rabe and crumbled goat cheese. (You just kind of fold in some chevre right before serving and let the heat of the pasta and sauce soften and melt it.)

I think I know what I'm having for dinner tomorrow...

13. Spinach sauteed in evoo with onions, garlic and *maybe* a little mushroom.
Spinach as above or mixed with collards or mustard greens. If mustard, use 1/3 with 2X as much spinach/collards. Mustard is spicy and may be too much by itself. As per the olive oil, you can use evoo since its bold taste stands up to the spiced sausage. sounds like a great meal.
