Help - need recipe

I need a desert recipe that includes asiago cheese.

1. Asiago isn't usually used in desserts.

(You can have it on a cheese plate, of course, but that's not a recipe.)

On edit: Is there a particular reason you need a dessert with asiago cheese?

2. I know, that's why
this is so hard. It's for our Iron Chef contest and I need to find a recipe that incorporates asiago cheese, possibly one of the "secret" ingredients, and memorize it to boot!
I got called in at the last minute, I swore I'd never compete again, but my boss asked me, and hey, how can I tell him no?

4. Thanks, I tried
FoodTV and my all time favorite, Epicurious.com to no avail. I'm thinking of just doing a crepe with some fresh fruit crap and sprinkle the damn cheese on top. Don't know how much we have to use to make it count though, so it just may turn out
what did my boss get me into?

5. Maybe you could use the cheese as a filling?
Mix the fruit with it, or better still, use a young asiago for the filling, with fruit on top. Mix with honey, for sweetening, and use a fruit topping.

I mix everything w/cream cheese fillings. Add a little fruit..voila!

Maybe you could come up with something using those as a base, perhaps some kind of baked apricot dish using asiago over the top after baking?

11. My appetizer is going to
be dates stuffed with asiago cheese, wrapped in bacon, and baked in the oven. I've made these already, super yummy!

8. How about this:
If you serve it with fruit it could be a dessert. Good luck!

Ingredients:

1 cup heavy cream
2 cloves of garlic, peeled & sliced in half lengthwise
1/4 teaspoon of nutmeg
2 cups grated Asiago cheese
Aged Balsamic Vinegar


Accompaniments:

Red Grapes
Pear or apple slices
Walnuts
Spicy greens such as Arugula


Directions:

1. Bring Cream, garlic and nutmeg to a boil in a heavy saucepan over medium-high heat, watching constantly. Remove garlic from cream.

2. Add Asiago, 1/2 cup at a time, stirring constantly until all cheese is incorporated

3. Continue stirring until all cheese is melted, about 1 minute. Remove from heat, pour into a shallow heat resistant dish and cool to room temperature. Cover dish and refrigerate until cheese stiffens

4. Scoop portions of "Gelato" with an ice cream scoop onto 6 salad plates. Garnish with your choice of accompaniments listed above.
5. Drip a few drops of aged balsamic vinegar over the gelato and serve.

Serves 6

19. You could use the sugar coated nuts that Diamond walnut makes
Just something to add sweetness. A dusting of raw sugar would look pretty too. Raw sugar has
bigger crystals and a slightly darker color.

20. I think I'd be inclined to start
with a Profiterole, and fill it with a glacée of heavy cream, Asiago, honey and lavendar. Then candy some walnuts or pecans and create a kind of praline topping for the Profiteroles. Finally, Asiago and Parmesan which have been finely shredded, such as the feather setting on a Hobart, - can be placed in a thin single layer on a sheet pan and roasted in the oven to form an intricate kind of 'lace' pattern. Once browned, it can be broken into suitable shapes and used as a pretty sensational garniture.

21. We're under a time limit
and are using a colleague crappy kitchen, and all recipes have to be memorized. This may be a little involved (although I really like it) but I do like your "lace" idea. Could make asiago crisps, and maybe poach pears w/saffron and do the candied nuts. Go after the sweet/savory effect! Ohhhh, now you've got me thinking here. Maybe dark chocolate, fresh fruit sorbet, asiago crisp! Thanks!!!!!
