Some recipes call for baking this but it's a good top of the stove dish too.
German Spareribs with Sauerkraut
2 to 3 lbs. pork spare ribs 2 16 oz. cans or bags of sauerkraut 3 tablespoons canola oil or other fat 1/2 cup white wine 1 1/2 cups water 1 medium onion (diced) 1 apple (grated) 1 bay leaf 3 whole cloves salt, pepper
Cut the ribs into 1 or 2 rib portions.Place ribs in a large pot, cover them with water and bring to a boil. Reduce heat and simmer for 15 minutes. Drain the water and cool the ribs. Sprinkle with pepper and set aside.
In a large pot) sauté the onion in fat until translucent. Add the ribs, reduce the heat and cook for 15 minutes, stirring occasionally. Drain sauerkraut and add it to the ribs. Pour water and wine over the ribs. Add the apple, bay leaf and cloves, turn up the heat and bring to a boil. Turn down heat to low, cover the pot and simmer for 1 hour or longer. Check the liquid level occasionally and add small amounts of water only if it looks dry. Season with salt and pepper to taste
Instead of cloves, some people toss in caraway seeds. Also you can peel and cube a potato and add it to the pot about 1/2 before the end of cooking.

If you aren't grilling them, then I would go with the crock pot. Chances are all you would have to do is put them in the pot with BBQ sauce for about 8-10 hours.

3. Hawaiian style (oven BBQ) or Chinese style |

4 lbs ribs 1 1/2 teas mustard powder dissolved in 2 TBLS water -- let stand for 10 minutes to develop flavor.
Mix these sauce ingredients together: 1 1/2 TBLS sugar 3 TBLS soy sauce 1 1/2 TBLS wine vinegar 1 - 2 teas salt (I prefer lower end of that range) 1 teas ground black pepper 1/2 teas ground ginger 1/4 teas cayenne 1/4 teas garlic powder.
Once mustard is ready, blend it into the sauce.
Toss ribs in sauce, cover dish and refrigerate overnight, tossing occasionally to make sure they marinate evenly.
Cooking: Preheat oven to 350. Spread ribs on a large shallow rimmed pan (like a jelly roll pan.) Pour marinade over the ribs and bake for 90 minutes, turning once.
CHINESE STYLE Same idea, but the sauce doesn't have mustard and substitutes these ingredients: 1/4 cup soy sauce 1/4 cup sherry 3 TBLS honey 1 tea salt 1 teas black pepper 1/4 teas ground ginger 1/8 teas garlic powder.
Marinate and bake as above, but turn at least 3 times .

Stick them and the sauce in a crock pot. Cook them over 6 hours.
Not as good as grilled, but not bad either....

Cuz making them's a hell of a lot harder than cookin' 'em, especially if you're planning on starting from scratch.
