Tonight for dinner: Spanakopita!
I have TWO spanakopitas (Greek spinach cheese pie) in the oven. If you're like me and live in a city with a thriving Greek community, you can get the authentic Greek cheeses feta, mizithra and kefalotiri as well as locally-produced phyllo dough. It's labor-intensive and messy but oh so good.

you to have locally made phyllo. My fave was my grandmother's homemade phyllo dough, though....I like your GSP, too!

my nephew-in-law happens to be a Greek-American chef. Mmmmmmmmmmmmmmmmm. Family dinners are good when he cooks. Okay, when I cook as well, but.

You have better weather down there than we do, trof.

There's a new Greek place in my city (the only one in my city). I'll have to ask them if they make that. Probably much less greasy and therefore better on my ateries too.:)

11. I just took one of the pies
with some pita bread to friends who had a preemie a couple of weeks back. They are at the hospital nearly every waking moment and have no time to cook. Baby's doing fine and should be home soon.

I have always meant to make it but have chickened out. Maybe this will inspire me.

I also love spinach rolls, which we used to get at a Greek diner in the Uni district here.
