Fuzz's leftover turkey recipe of the night.

Just made this.

Turkey & Mango Quesadilla's

Heat oven to 375

In a large bowl mix:

Chopped leftover turkey
1 ripe mango
Shredded Jalapeño Jack cheese
Juice of one lime
Chili powder to taste
Salt & Pepper to taste
Cayen pepper (optional)

Mix thoroughly. Spread mixture evenly on flour tortillas on a baking sheet. Put another tortilla on top and squish (not necessarily a cooking term) down.

Bake until the cheese in melted. Cut into quarters, top with chopped scallions and serve with sour cream & salsa.
