in a sandwich, deep fried, pan fried... I've never had an oyster prepared in a way that I didn't like.
Though when it comes to eating them raw, two or three is enough.

Personally, my favorite is baked on the half shell. A little garlic, some lemon juice, cracked pepper, paprika and some tarragon. YUMMY!

Fried 1 1/2 cups yellow cornmeal 1/2 cup all-purpose flour 2 eggs, lightly beaten 2 cups milk 1/4 cup melted bacon fat or butter 1 tablespoon baking powder 1/2 teaspoon salt 3 cups peanut oil, for deep-frying 36 freshly shucked oysters Lemon wedges, as accompaniment
In a medium bowl, combine the cornmeal, flour, eggs, milk, bacon fat, baking powder and salt. Stir until the batter is smooth.
In a large saucepan or deep-fryer, heat the oil to 375F. Dredge each oyster in the cornmeal batter and fry in batches until golden brown, about 1 minute. Remove the oysters with a slotted spoon and drain on paper towels. Serve with lemon wedges. Shooters recipe yield: 12 shooters. INGREDIENTS: 1 (10 ounce) container raw oysters 9 fluid ounces tomato juice 1 teaspoon prepared horseradish 2 teaspoons pepper 12 (1.5 fluid ounce) jiggers vodka 1 lemon - cut into wedges, for garnish ~~ DIRECTIONS: In a mixing bowl, combine tomato juice, horseradish and pepper. Mix thoroughly. Cut the lemon into 6 wedges. Pour 1/2 shot of tomato juice mixture into a small glass. Add a shot of vodka. Put 1 raw oyster in the glass and garnish with lemon wedge.

19. Funny story about oysters in central Texas. |

This has been years ago (25 plus years), my husband and I were on a geology filed trip in central Texas, Johnson City I believe. We went to eat a local restaurant for dinner where he ordered a dozen oysters on the half shell. Well he waited, and he waited, and he waited. What he got when they finally arrived was six in shell and six in a bowl and just in time for dessert. Okay we thought it was odd when the waitress kept hovering at our table after the oysters were served when she was mostly absent before they arrived. Finally in desperation she admitted that all she wanted was the shells. Turns out that someone else ordered oysters and she needed to run the shells through the dishwasher. Needless to say this explained the mystery of why his order was so long in coming.

I'll eat them any way I can get them--baked, fried, scalloped, in a stew--any way I can get them is great. However, RAW oysters that are fresh shucked are to DIE for.
I'd crawl over broken oyster shells (or broken glass!) to get fresh shucked oysters.

and about a half hour out of cold Alaskan water. These are are so fresh that the oyster fights back and sometimes wins!
