1. I love soup, too!..... |
|
...bean soup, tomato soup, vegetable soup, etc. Winter time is a great time for soup, but I also love it year-round!

6. It depends on what I have on hand..but here's the basic |
|
London broil cubed (brown a bit)..sliced/chopped onion..cubed potaotes, turnips, carrots, de-stringed celery, chopped cabbage, corn, canned tomatoes(whole ones squished by hand), canned green beans..3 large bay leaves..add water to cover all ingredients, and simmer away..The longer it cooks, the tastier it is.. My pan has a very tight-fitting glass lid.. Salt & pepper to taste..and that's all there is to it..
If frothy stuff comes to the top, just skim it off and discard..
You can use fresh veggie, but my husband likes the canned ones, so that's what I use:)
Basically, just add whatever you like.. I have even added cooked pasta from time to time.. It's a great way to use up leftovers:)

4. I like vegetarian soups |
|
Preferably with pasta, chunks of potato or lots of barley. I'll drain off most of the broth as I'm not fond of really "soupy" soup, plus that helps get rid of a bunch of sodium as well.

8. another good one.. beef & noodles |
|
frozen or homemade egg noodles, london broil cubed (we like superlean beef)..
brown the meat cubes..add minced onion (My food processor makes them almost liquidy (squeeze out moisure)..cook it all up til the meat is browned well, but not fully cooked..add 3-4 squirts of worchestershire sauce, water to 1/2 way up the pressure cooker and pressure cook ..don't worry about overcooking..you want the meat to be falling apart.. When you release the pressure, just add the egg noodles, stir well and let it sit a bit to soak up the liquid.. If you need more liquid, add more water before you add the noodles..
We use Grandma's frozen egg noodles.. usually 2 packages per batch, unless I use the BIG pressure cooker:)

I've got potato and celery with cheddar cheese to be added once it's heated. :9
I always dip bread into it too (which then results in soup drips all over the place).
Nothing quite so wonderful as soup.
