I made a salad:
Fresh Broccoli Fresh Cauliflower Fresh Baby Carrots Italian dressing Mozzarella Cheese Parmesan Cheese Whole Wheat low carb Rotini
Very filling, very healthy, and very yummy.

Portabello mushrooms and olives, chopped. Spinach, onion various Italian herbs. All sauteed in Spanish olive oil. Mmmm, I'm getting hungry again.

I'm on the tail end of a frazzled-nerves episode, and I don't eat a lot during those times.
Plus I had a very gut-bomby turkey melt for lunch, and I can still feel it. (Homemade granola with yogurt and fresh fruit for breakfast, though, so today wasn't a total loss.)

6 tilapia fillets 1 rib celery heart, minced 1 small white onion, chopped --sometimes I use two scallions 4 T. butter or "I Can't Believe it's not" (MrG is on a cholesterol lowering regimine) 1/4 C. parsley (sometimes I don't have this so feel free to omit or I use Tarragon 2TB) 1 can lump crab meat, drained and flaked 1/2 C. bread crumbs 1 T. lemon juice 1/4-1/2 cup shredded cheese ( I like Colby or Sharp cheddar) 1/4 t. cayenne pepper (you can use less) Paprika
Saute celery and onion in butter until tender;add parsley. Remove the skillet from heat and stir in crab meat, bread crumbs, lemon juice, cheese and pepper.
Spread mixture on tilapia fillets. Roll up fillets and place, seam side down, in a greased 9- by 13-inch casserole dish;Using a sharp knife scour the top of the fillet. Sprinkle melted butter and paprika on top and bake at 375°F. for 25 to 30 minutes.
I use the Tilapia that you can get from costco and defrost it overnight in the fridge. :hi:

I rubbed the brisket last night with white & brown sugar, salt & cajun seasoning.
The ragu is like a happy pot ... every week I add something, boil it long enough to keep it sterile for another weekend. Yesterday I added roasted carrots, celery and parsnips - and tonight, the leftover brisket.
Tomorrow ... roast pork loin and sweet potato casserole - it's a mandatory holiday from work.

Very easy recipe, and low-fat. the main ingredients are 1 can of black beans, 1 can of Green Giant Mexicorn, and 1 can of Ro-Tel tomatoes with green chiles. Just spoon the mixture along with shredded cheese onto a tortilla and voila.

It had 20 of a mix of Serrano and dried red chiles, ground up with a dozen cloves of garlic.

I've treated them to quite a few dishes since then.
The Fire Noodles are a favorite so far.
Great thing about many Thai noodle dishes is they are even better the next day cold out of the fridge.

Tomato, basil, onion, peppers, mushrooms, meatballs...it was good.
We also had a salad with tiny sweet grape tomatoes, pea pods, and raspberry vinaigrette dressing.
