How are Marshmallows Made?

In the 19th century, marshmallows were made by mixing mallow root sap, egg whites and sugar into a fluffy mold. The French added cornstarch to help speed up the production and give the candy its unforgettable form.

Today the manufacturing of marshmallows is quite different. Mallow root sap has been replaced by gelatin. Corn syrup, starch, sugar and water are mixed with the gelatin. The fluffy mixture is piped through long tubes and then cut into equal pieces. To create shaped marshmallows like Peeps, a special nozzle moves back and forth to cut the marshmallow into recognizable shapes.

Marshmallows also can be made at home. The ingredients are almost the same, but salt and vanilla extract can be added in for flavoring.

gelatin
Plain unflavored gelatin is a high protein granular substance obtained from cooked animal bones and hooves. It is colorless, odorless, and sugarless. Gelatin is packaged in envelopes, each containing about 2 1/4 teaspoons and uses 2 cups liquid to congeal. It is most often used in fillings such as mousses and Bavarian creams that require refrigeration and to stabilize whipped creams. Less gelatin is required for those purposes than more liquid preparations. Too much gelatin produces a rubbery, unpleasant consistency. Gelatin must be rehydrated before it can be used. To dissolve gelatin, put liquid, usually water, in a small heatproof dish. Sprinkle the specified amount of gelatin over top of the water and let stand 5 minutes. The gelatin will turn opaque and thicken. Heat over simmering water until the grains dissolve and the liquid is perfectly clear. Stir occasionally to dissolve evenly and do not let it become too hot or it will lose its thickening power. After it is melted, remove from water and cool just to tepid. This only takes 2 to 3 minutes. Gelatin must be blended into cooler mixtures when tepid or it will form into tiny lumps. If it stands too long and gets cold, it will solidify. It can be remelted and cooled down again to a pourable state. Once the gelatin has set a mousse filling or whipped cream, the mixture must be gently handled. Overmixing will cause the gelatin to thin down.

The ricemallow fluff is good, too. So are the white chocolate chips (can you tell I did an order recently?)

Edit: Sometimes they have the batches that came out a little gummy marked down for just over a buck a bag- they still make great rice cereal treats.

I never liked marshmallows much so it usually doesn't bother me but I'd like to be able to make smores when I take my son camping. I used to be able to get gelatin-free marshmallows at the Kosher grocery store but now they've started carrying marshmallows with kosher-gelatin :wtf:

I'll put it up in the tofu ghetto too, since we have a lot of new veggies posting lately and they may not know where to get stuff. :)

FYI: Kosher gelatin comes from fish. The only thing that sounds nastier than a dessert made with hooves and crap like that is one made from fish bones. :puke:

whatsoever and then the marshmallow company started making them with kosher gelatin. I just don't get that, the marshmallows were great, why did they have to go and add some ground up bones :puke:

23. It may be the ones they were selling were the ones made with
emes gel, a product that was marketed as a vegan gelatin substitute that turned out, based on lab analysis, to be mostly fish gelatin and thus neither vegan nor vegetarian.

I would prefer if the bones and hooves of these lovely creatures were left attached to the creatures. I have a difficult time thinking about what we do to animals but that is a whole new issue.
