2. Try them frozen

or this fun one:

roll out sugar cookie dough, cut into rounds slightly larger than a thin mint. Place thin mint in between two sugar cookie rounds like a sandwhich, press edges shut, cover top with nuts or sprinkles (optional) and bake. YUMMY.
