edit: After thinking about for a minute, I have to admit that Copeland is a hell of a lot of fun perform. Easy, but robust.

It's just much too much 19th century orchestral bombast. Also I don't like the 1st movement of Tchaikovsky's Piano Concerto No. 1 - the other movements are OK.
What classical pieces do I love??? How much time do you have? 10 off the top of my head: Chopin Preludes, Brahms 2nd & 4th Symphonies, Beethoven Emperor Piano Concerto, Mozart's opera "The Marriage of Figaro" and Piano Concerto No. 20 in D minor, Brahms Double Concerto for Violin and Cello, Rimsky-Korsakov Scheherazade, Bach "Goldberg Variations" recorded by Glenn Gould in 1955, Ravel "Le tombeau de Couperin" for solo piano recorded by Abbey Simon.
