Browned Beans
I love browned beans. I always buy them in a can because I never thought about trying to make them myself until this morning, when I have no cans of browned beans. What kind of beans do they use?

Does anyone have any good recipes for making browned beans?

Also, what kind of dishes have you made with browned beans (besides weenies and beanies)?

1. I always wondered that myself
and also how do they get them so soft. I have on occasion used dry beans to do chile but the beans even after sooaking overnight and cooking are still crunchy. I have resorted back to the canned beans until I can figure it out.

i googled and they seem to be a specific breed of bean

I'd suggest a foray into the cooking and baking group, but alas, you have no star.

yeah, i see them as "browned beans" on some cans and "baked beans" on other cans.

I love how soft they are and I love the sauce. On occasion, I get them with breakfast at a greasy spoon diner.

I just broke down and went to the store down the street and bought a can of baked beans. There were two different kinds at the store -- one made with tomato sauce (and that was the one with "baked beans" on the label) and the other one containing molasses ("browned beans" was on the label).

The label says that white beans are used. The other label says navy beans. Are these the same things? I googled some recipes and found different recipes for "baked beans" that also contain molasses. Here's a recipe:

It sounds like they're stewed in a crockpot for hours to get them soft.

Mmmmm, I'm going to try to make this once I get my hands on a crockpot.

7. Best homemade baked beans (takes a while)
2 cups white pea beans (check them over for small rocks)

1/4 lb salt pork (or 1/4 cup light olive oil + 2 teaspoons salt)

one med-large onion peeled and halved

1/3 cup molasses

1/3 cup brown sugar

5 teaspoons dry mustard

soak the beans overnight in cold water, changing at least 3 times

simmer the soaked beans 30 minutes, changing water 3 times (this deprives them of their musical powers)

drain beans

add beans and rest of ingredients to a bean pot

add just enough water to cover the beans

bake at 225 degrees F for at least 8 hours.

I have known brown beans all my life as being what happens to pinto beans when you cook them, they turn brown. These are best when cooked in a cast iron pot over the course of a couple of days. Wash the beans, pick out the rocks and soak them overnight. Cook them on a medium temperature for at least eight hours, the longer the better, with ham hocks or salt pork (bacon if you can't find either of the others). Check them every hour or so in case if you have to add water. Serve with yellow onions and fry bread (the kind you see served with Indian tacos).
