I simmered a whole chicken today. Need to feed 5 - 3 are teens. Have the chicken and the broth for soup but don't really feel like soup so could save the broth for another time. What sould I make? I was thinking chicken enchiladas but don't have any beans done to go with ... bleh I am hungry and indecisive. Help.
Have noodles, rice, potatoes, corn tortillas, carrots, some frozen vegs (too lazy to go look) plenty of spices, onions garlic etc....

Lots of herbs in the gravey (parsley, sage, thyme,minced and sauted onion, cleery if you have it, pepper) Cook up a big side of veggies
If you have more broth than you need for the gravey, put it in ice cube trays, freeze then pop into baggies for when you need more stock for a recipe.

broth, cellery, carrots, onion, potatoes, corn, peas and lots of meat (was thinking of splitting it and using half for something else, but as I mentioned...3 teens.) Husband is making his world famous, looks-like-a-giant-mound-o-cement drop biscuits. This is borderline winter food and today was VERY warm and springlike (hence the reluctance to do soup in the first place) but it is cooling off now and the food smells good so I will get over my THING about the season.
